My Mama recently shared this simple and quick crock pot tortellini recipe with me. I enjoy learning what other women are cooking up in their kitchens and sharing what is going on in mine. I know my girlfriends are frequent recipients of text photos of what's in or on my oven/plate/pot! Sometimes, I get in a "food rut" and eat the same thing OVER and over (hello hummus and sprouted corn tortillas!) and just need a little food inspiration to pop me on out. This one is so easy and so good. And makes a heap of food!
- 1 package tortellini (I choose a vegetarian diet so I go with cheese tort!). Meat-lovers, add your sausage to "beef it up".
- 1 block of cream cheese
- 1 small to medium sized bag of spinach. It may seem like a lot at first, but trust me, it cooks WAY down.
- 2 cans of diced tomatoes (I enjoy using my own fresh herbs, but if you don't have any handy, use italian style diced tomatoes).
-1 box vegetable broth
- fresh or dried herbs (basil, sage, thyme, marjoram, garlic, garlic salt, pepper)
Put one can of diced tomatoes on the bottom first.
Then add all of the other ingredients in any order you want.
Cook on low for a total of 4-5 hours. Stir it all up at about 3 or 3.5 hours, if you're home. If not, no prob! Stir at the end.
If you want to make it more hardy (meat eaters, add meat) or want to get some more veggies in add mushrooms! A couple of large portabella mushrooms diced up and added in is delicious!
I haven't tried it yet, but I bet diced up red, yellow or green pepper would be tasty too.
If you're a mama and juggling a million things, or headed out to the office for the day, the crock pot is an amazing kitchen friend! Just toss together your magic in the morning and come home in the evening to this delicious ready-made, home-cooked meal. No doubt, you and your peeps will LOVE it, I know mine do!
